Guest guest Posted July 5, 2004 Report Share Posted July 5, 2004 Easy Tex-Mex Bake Serves 6 8 oz uncooked thin mostaccioli Nonstick cooking spray 1 lb ground turkey breast 2/3 cup bottle medium or mild salsa 1 pkg (10 oz) frozen corn, thawed and drained 1 container (16 oz) low-fat cottage cheese 1 egg 1 tbsp minced fresh cilantro 1/2 tsp white pepper 1/4 tsp ground cumin 1/2 cup (2 oz) shredded Monterey Jack cheese Cook pasta according to package directions, omitting salt. Drain and rinse well; set aside. Spray large nonstick skillet with cooking spray. Add turkey; cook until no longer pink, about 5 minutes. Stir in salsa and corn. Remove from heat. Preheat oven to 375 deg F. Combine cottage cheese, egg, cilantro, white pepper and cumin in small bowl. Spoon half of turkey mixture on bottom of 11x7 inch or 2 quart baking dish. Top with pasta. Spoon cottage cheese mixture over pasta. Top with remaining turkey mixture. Sprinkle Monterey Jack cheese over casserole. Bake 20 minutes or until heated through and cheese is melted.
