I also only eat that one starch for instance I would eat a 2 egg omelete with cheese and spinach along with the peas. I feel lucky I can eat at least this as there are many other things others can eat I cannot. Anything with vinegar which is supposed to make one's BG go down makes me go very high. I agree a good reason for using a meter. I feel like this gives us such freedom and knowledge. Meters are great if you know what to look for. I've been able to fit in higher gylcemic index items by using smaller portions.
