Traditional Rhubarb Pie

4 cups chopped rhubarb

1 1/3 cups white sugar

6 Tblesp all purpose flour

1 Tblesp butter

1 batch of pastry for a 9 " double crust pie

Preheat oven to 450 degrees

1. Line 9 " pie plate with 1/2 of the pastry.

2. Combine flour and sugar. Sprinkle one quarter

of it over pastry in pie plate.

3. Heap rhubarb over the flour/sugar mixture.

4. Sprink with remaining sugar/flour

5. Dot with small pieces of butter

6. Cover with top crust. (For a shiny crust, brush top with

egg yolk)

7. Place on lowest rack in oven - bake 15 minutes.

8. Lower temperature to 350 degrees and bake another 45 minutes.

Serve warm or cold.

Rhubarb Strawberry Pie

Ingredients:

9 inch pie crust6 Tablespoons flour2 Tablespoons corn starch1 1/2 cups sugar2 cups rhubarb peeled and sliced to about the size of the strawberries2 cups strawberries2 Tablespoons butter

Procedure:

Mix

all dry ingredients together and then mix with rhubarb and strawberries. Place

in crust. Put little chunks of butter around on top. Sprinkle a little nutmeg

over it. Put on top crust and make a few slits. Bake at 425 degrees for 15

minutes. Then bake at 325 degrees for 45 minutes or till done.
