Guest guest Posted May 5, 2004 Report Share Posted May 5, 2004 Chicken and Dressing 4 chicken breast halves1 tbs poultry seasoning1 stick butter3 cups of reserved liquid from cooking chicken2 pkgs Mrs. Cubbisons Dressing Mix or similar1 med onion diced2 stalks celery dicedsalt and pepper to taste Pound the chicken so it is flattened out slightly. Cut each piece of chicken into 3 pieces. Cook in water that has been seasoned with salt and pepper. While chicken is cooking place the onion and celery in small pan and cover with water. Boil till tender. In a large mixing bowl empty the contents of the Dressing or Stuffing Mix. Add the poultry seasoning, cerlery, onions, butter, and chicken.Add the chicken broth that you reserved from cooking the chicken. You need 6 cups of liquid. If the chicken brfoth is not enough use the liquid from cooking the onions and celery. You can always add a little water to make it enough. If the mixure appears to be too dry, add a little more water. Mix together and place in a greases casserole dish. Cover and freeze at this time. Thaw completely before baking.
