masa flour

I was talking to my S.O. a few nights ago (first blood test for celiac

panel today). I forget what I was whining about, but he suggested I

try making things with masa flour.

So far the only thing I've made with corn masa flour are tamales that

my mother and I did around the holidays last year. It was a lot of

work, and she said that she isn't up for making them again anytime

soon.

If I knew enough Spanish, I suppose I could go visit the south Tucson

ethnic markets and ask. But I figured I'd try here first. Has anyone

experimented with corn masa flour? What would it be good in?

I make a tamale pie..much easier than making indiv. tamales.

there are a thousand different recipes for tamale pie.

In fact I went to El Corral the steak restaurant here in Tucson where their famous side dish is tamale pie...the waitress said yes there was flour in it the first time I went..so I didn’t eat it. the next time I went the waitress said I will ask the chef..and there was no flour in it just corn meal...

it was ok. I like mine much better. It is from Farmhouse Cookbook.
