Well, there's another one you may or may not be aware of that is really delicious and even nutritious! The " main " recipe that I make is as follows: Pumpkin Spice Cake or Muffins 1 box spice cake mix (Betty Crocker) 44 pts 1 15-oz. can Libby's pure pumpkin 0 pts 2 egg whites 0 pts 1 6-oz. container Yoplait Light Very Vanilla Yogurt 2 pts Mix together the pumpkin, egg whites and yogurt, then mix in the cake mix. Either spread in a 9x13 pan or in 24 muffin cups, sprayed with Pam. Bake at 350 for approximately 15-20 minutes. Cool, then remove from muffin tin. Cake yields 12 pieces at just under 4 pts each (roughly) and 24 muffins are 2 pts each VARIATION: (I tried this one today and it was absolutely yummy!!) Banana-Spice Muffins/Cake 1 box spice cake mix (Betty Crocker) 44 pts 3 very ripe (brownish) bananas, approx. 6 ounces = 4.5 pts 2 egg whites 0 pts 1 6-oz. container Yoplait Light Very Vanilla Yogurt 2 pts (because the bananas are mushy, I only added 1/2 a container of yogurt) Mix and bake as above.
