Hey Kim,

No problem.

Yeah - it's 1 quart of water to 1 and 3/4 cups of almond meal - you

can use

the coarser grade meal for this, no need to use the expensive stuff -

plus

1 and a half TBs honey and two large dates.

And some vanilla if you want (to taste). Just chuck it all in the

blender or

vitamix for 8-10 minutes, then ladle off the top bubbles and use in

coffee

if you like cappuccino type drinks and then strain the rest through a

dishcloth or a

handkerchief or something - cheesecloth is kind of useless here, I

find, since too

much can escape.

On further " research " , there can be some separation, but its still less

than making it without the dates for some reason. Separation doesn't

mean it spoils, you just shake it back up in the jar and its fine.

It lasts like 3 days in the fridge or so. Maybe 4. Mine doesn't last

that long, so I'm not sure. There is definitely less sedimentation

at the bottom with the dates - am not sure why, so I think the whole

thing keeps better, but am not sure why on a biochemical level.
