My very favorite fruit is fresh strawberries and sadly, we're about at the

end of our season for them. :( The most-fun way I enjoy them is sliced, 1 1/2

cups and mixed with 1/4 cup of softened Cool Whip Free and then -- the clincher

-- I spoon them into a Keebler Waffle Cone (yes, an ice cream cone -- 1 point

each and they're large!). The whole thing is 2 points (1 for the cone, .5

for the berries and .5 for the C.W.).

Yum!

Question of the day 7/7

Which fruits are a big part of your diet? How do you like to eat them?

(Raw and plain, baked, etc)

Any tips for working more fruit into an eating plan?

My Answer:

Right now I have blueberries, raspberries, strawberries, peaches,

nectarines, watermelon, canteloupe, red seedless grapes, and bananas. I

normally just eat them plain or in a smoothie made with yogurt.

FRESH fruit of any kind is on my mind and melons which are growing in my

garden.

I made a Mango Salsa for some chicken on July 4th when I had some

girlfriends over. Very good, simply:

1 cup mango, chopped

1/2 sweet onion like Walla Walla (or more if you like onions, like me)

roasted red peppers (they suggested canned, but I roasted mine myself SO

GOOD)

chopped fresh mint

juice from 1 lime

Just mix it all together and let the flavors come together in the

refrigerator for about an hour before serving.

Answer:

Blueberries: In cereal, and pancakes.

Mandarin oranges: in a spinach salad with blueberries, shredded carrots,

chicken breasts (marinated in light raspberry and walnut dressing), pecans

and same dressing the chicken is marinated in.

Bananas: alone or in cereal

Right now watermelon and strawberries are my favorite fruits, especially

since I'm afraid they'll not be as available in a few weeks. I also love

bananas, and often will eat a little mixture of strawberries and bananas.

BLUEBERRIES!!!! Yum!!!!

Actually, I'm a BIG Fruit eater - especially " summer " fruit - berries,

melons, peaches, plums, nectarines, banannas (good food

to eat on the bicycle), grapes, cherries - with stuff like this who

needs cookies & candy ??????

Oh, I forgot to say about Blueberries - I like them on my Kashi Go Lean

cereal in the

morning or with FF Frozen Cool Whip for dessert or just out of the box

for a snack or

occasionally, I'll mix them with FF Sour Cream and some Splenda with a

slice of toast

and a cup of milk - a meal that brings me back to my youth.

Oh it is! It is the best light ice cream out there, in my opinion. In fact

it doesn't taste light to me at all.
