I can readily find sugar-free fat-free instant pudding, and regular, high sugar cook-type vanilla. On the latter, the calories are high. Do you have a special source? I've also used the butterscotch sugar free, but it changes the taste. Not in a bad way, mind you! It just changes it in a different way. You could also do chocolate.
