I am way behind in responding to e-mails so I'm tying to get caught up. I

promised to find granola recipes a couple weeks ago so here they are. Better

late than never ;o) The first recipe is from Better Homes & Gardens and it's

a great recipe, the second one someone else posted a while back and I have

never made it so can't say.

Down to Earth Granola (3 points for 1/3 cup)

4 cups old-fashioned oats

1 1/2 cups sliced almonds

1/2 cup packed light brown sugar

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 cup cooking oil

1/4 cup honey

1 tsp vanilla

1 1/2 cups raisins or dried cranberries

Preheat oven to 300 F. In a bowl mix oats, almonds, brown sugar, salt, and

cinnamon. In a saucepan warm oil and honey. Stir in vanilla. Carefully pour

liquid over oat mixture, stir gently or mix by hand. Spread granola onto

jelly roll pan and bake 40 minutes stirring carefully every 10 minutes. Cool

completely. Stir in raisins or cranberries. Store in airtight container.

Store at room temp for 1 week or in freezer for 3 months. Makes 9 cups (24

servings).

I'm sure you could cut the points by cutting out the oil and maybe spraying

it really well with Pam but I haven't tried it.

GRANOLA (No points were listed so you will have to run it through a recipe

builder)

3/4 cup brown sugar

1/4 cup water

2 teaspoons pure vanilla extract

1/2 teaspoon salt

4 cups old fashioned rolled oats

1/2 cup chopped walnuts

1/2 cup slivered almonds

Preheat oven to 275 degrees F.

Combine brown sugar and water in a glass 8-cup measuring cup or bowl.

Place in microwave on high for 2 1/2 minutes and cook until sugar is

completely dissolved.

Remove from microwave and add vanilla extract and salt.

Add oatmeal and nuts and stir until thoroughly mixed.

Spread the granola onto a cookie sheet (if you have a cookie sheet baking

stone, all the better) and bake for 1 hour until golden and crunchy.

When granola has cooled completely, store in an airtight container.
