Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 1/8 cup Extra Virgin olive oil 1/8 cup water 2 tablespoons lemon juice 3/4 teaspoon salt 1/2 teaspoon pepper 2 boneless skinless chicken breast 2 tablespoons light mayonnaise 10 ounces romaine lettuce 1 ounce parmesan cheese 1 ounce romano cheese if you can afford the points add 1 oz mozzarella In a large bowl, whisk together water, oil, lemon juice, garlic, salt and pepper. Remove 2 tbls. oil mixture from bowl add to skillet (or brush over meat and grill/broil) cook chicken for about 5 min or until done. Add mayonnaise to remaining oil mixture. Add lettuce, cheese (leave a bit of cheese for garnish) and toss to coat. Arrange salad on four serving plates. Cut chicken crosswise into 1/2 inch slices, arrange on salads. Sprinkle with remaining cheese. This comes out to 6 points......I love it with Caesar Salad croutons, but I did not have the points listed for those so I omitted those from this recipe. We just love this, even my 3 1/2 year old eat this. The salad dressing keeps for about 3 days, if you want to make it ahead of time or if you don't use all of it. I just stick them in my freezer and when I need a bit of cheese I shake the container and spoon out what I need (frozen) and by the time we eat our salads it's thawed.
