I can't help you with your quest for s/f peach jello (sounds yum) - but you said you get 0 carb whipping cream at the store - just wanted to mention that while PER SERVING it may be 0 carbs (that is, less than 1), per cup PURE whipping cream is 6.6 carbs (that's without any sugar or preservatives added - those might add more).
