Guest guest Posted October 31, 2004 Report Share Posted October 31, 2004 Hello and Halloween greetings to all, We survived Halloween by taking a trip to Best Buy and getting Colton a new video game in lieu of a costume and trick-or-treating.... He was thrilled to get the game... yeah! Also, I tried the chicken nugget recipe... dipped the chicken strips in mayo and then coated them with crushed pork rinds.... Colton really liked them.... thanks so much for the great recipe! I read that some people replace potato with turnips.... anyone here try this? any recipe ideas (i.e. to simulate french fries?) We started our keppra wean on Saturday..... reducing 250 mg a week for 10 weeks, if all goes well..... Keeping our fingers crossed...... If thinks go okay, he'll be done with keppra by New Year. Of course, we all know better than to expect things to go without minor setbacks..... but just the same, we are glad to be in the wean cycle..... He is still on carbatro (just 100 mg daily) and depakene (1750 mg daily)..... Any tips? FYI - we have had tremendous success with Wishbone Carb Options Ranch dressing and the Carb Options A-1 sauce. We add oil to both, but the flavors are still there.... and our son loves them..... Also, we have found a flat bread called Lavash Lite. For mashed potatoes we use cauliflower but I'm going to try the turnips. For french fries, I use zucchini, I peel it and then slice it like shoe string frieds and then fry in a skillet intil crispy and then salt. He loves them. What about the flat bread? I've found that substituting ground macadamia nuts (naturally 3:1 ratio)I can make many recepies (pizza, muffins, pancakes, waffles). I also have a low carb bread I use (Irene's Glutten bread) which works great for grilled cheese. You'd have to compare it to the bread that you have to see which is lower in carb; if I cut off the crust, I can use two peices of bread, each 2/3 of a slice. Regarding sauces, I love Walden Farms Brand--they have 0 cal for 1 Tbsp, I find I can use 1 tsp one to two times a day without any problems. There's a ketchup, chocolate syrup, pancake syrup, ranch dressing and I think a barbcue sauce. As a thought for next year, I'll share that what we do for Halloween is that I deliver a small toy or book to my neighbors 2-3 days before Halloween, along with a brief note about Bryce's diet and a description of his costume. He still gets to trick-or-treat then. For houses that forget about my note, he takes the candy and we have a trade at the end of the night. This was our second Halloween on the diet. Last year seeing the candy bothered him (he'd stare at it and smack his lips); this year he could care less. Several houses actually gave him extra toys or stickers they purchased themselves. The kindness of strangers is incredible. For our treat, I bought toys at Oriental Trading company that we handed out. Good luck! It looks like it can be ordered by phone (818)771-9002. One serving size (28 grams) has 0 fat, 5 carbs, and 4 protein. It has truly been a godsend to us in making keto pizza, as a replacement for morning toast with eggs, etc. Also, we found a marinara sauce by Walden Farms (waldenfarms.com). 0 fat, 0 carbs, and 1 protein per 90 grams/serving. Colton loves this for his pizza sauce. Looking forward to trying the zuccini..... Do you coat it in anything before frying it? Can anyone give me a recipe for keto ice cream? Then I fry it in skillet until crispy and salt it. loves them. I didn't introduce them immed after starting diet becuause things were to fresh in his head and he knew what french fries were but now he loves them with chicken nuggets. As far as ice cream goes, depends on your ratio. I use cream, egg and either sug free jello or sug free choc pudding which is on the meal planner or you can go without the egg also. I have an ice cream maker and make it in bulk and then divide out. You can use you mealplanner and make it times 10 or 20 and then divide it out.
