Low Carb Chicken Nuggets Ingredients: Boneless Chicken (I prefer dark meat) Ground pork rinds (I grind them in my salad shooter, a bag at a time and keep in my old sugar canister!) 1/4 C. No Carb Bake mix (Carbsense) Several eggs mixed Cream Oil ( I like a combo of peanut oil and Coconut oil) All amounts vary with the amount of chicken you wish to use. I make an egg wash by mixing the eggs and cream together. Mix the pork rinds and baking mix together. Soak the chicken for a few minutes in the egg wash, and dredge in the pork rind mixture. Fry in hot oil till done in the center. This makes a very moist chicken nugget that my family likes better than the ones they have eaten for years at fast food places! The baking mix takes away some of the super salty taste of the pork rinds, but I have made them without it and they are fine. You can make a hot mustard sauce by adding Tabasco sauce to regular mustard. Virtually no carbs per serving Quote Link to comment Share on other sites More sharing options...
Guest guest Posted October 7, 2004 Report Share Posted October 7, 2004 Hmmm....I have never tried them with the bake mix added, I just roll the (already pre-grilled when I do it) chicken pieces in the crushed pork rinds then fry them, but it sounds a lot closer to the real thing with the bake mix, will have to try and track some down.... We actually found that using egg to roll the chicken in first used up too much protein (cos of the chicken and pork rind content) and using mayo instead for this purpose worked just as well - plus of course it took care of a bigger slice of the fat portion of the meal. also likes the extra bit of flavoring that the mayo gives, so as a variation you could perhaps try that instead of the egg. Oh, and because they are quite fiddly to make....and I am not a patient kitchen person...I sometimes combine all the ingredients together, but crumble the cooked chicken up instread of using pieces and make chicken 'patties' instead of nuggets. ----- Original Message ----- From: Hallie My grandson wants some chicken nuggets.
