3 days no seizures and cake help!!!

I hate to speak to soon, but I had to share how excited I am that Stella has

had 3 wonderful days with no seizures. I have been experimenting with using

mostly coconut oil (saturated fats) and I've stopped giving her whipped

cream by replacing it with creme fraiche. Making a yogurt out of the creme

fraiche which she loves. I don't know if it is these changes or just pure

luck, but I'm enjoying every minute of it. She starts school tomorrow, and

I'm so holding my breath that she makes the first day seizure free. I know

everyone will be on edge waiting for the first seizure.

What foods do you guys make for you children to take to school? I'm

thinking easy, like fresh mozzarella salads, macadamia nuts, and a yogurt.

But I'd love some ideas. Also, I've tried and failed too many times to make

that awesome chocolate cake that Emma has on s friends site but it's

not working out. Maybe my ratios are wrong. Stella gets 1225 cals a day, 21

grams of protein, 3 meals a day and a 4.0-1 ratio. If anyone has any luck

with that cake recipe and can send me the correct weights for Stella's ratio

I'd sure appreciate it, there are non stop fall/winter birthdays in her

class, and since Stella will be diet restricted I've been nominated to

provide the cake. AAHHH.
