Re the cake, if you could let me know the values of your ground almonds I could give you the quantities of ingredients I think would work??? I'm sure the US values would be different to here. Stella gets nearly twice as much carb as Francesca, so it should be easy to get a good consistency for a cake - my problem often was not being able to use enough nuts. I also make cookies for snacks, which use coconut oil, desiccated coconut, cocoa, macadamia nuts, and egg which I'm sure you could do for Stella as part of a meal. Lunch foods will be tough for us this school year, as Ethan has suddenly grown tired of his gouda cheese meal. It may be hard on a 4.0 Ratio, but you might try making muffins with almond flour. I'll give you my proportions, and if you have a planner, I think you should just be able to plug in these numbers and then very the rest of the meal accordingly. 5 grams almond flour, 2 grams egg yolk, 3 grams stiff egg white (add this at the very end so as not to overstir), 3 grams melted butter, pinch of cinnamon, 1/8 tsp powdered stivia, pinch of salt, pinch of baking soda. I use 4 grams frozen blueberries, but on 4.0 ratio you might want to use skinless apple pieces instead. It makes one very small, blueberry laden muffin. It travels well. (bake at 350 until brown.) Also, I can't believe you are providing the class with birthday cakes! Keto cakes aren't the easiest things to make. Maybe you should bow out of that task, and just take a separate muffin or treat for Stella. Ethan has enjoyed auctioning off sweets that his classmates bring in. In Science the first day they floated oreos in milk and hypothesized how long they would float. Oreos and milk were EThan's absolute favorite snack. I can't believe he actually held one in his hand. It just goes to show how far he has come on this diet. But afterwards, he accepted a black sharpie pin as the highest bid for the cookie. I'm wondering who would have wanted a soggy cookie? School treats are hard, because you have to adjust their whole meal plan for the day. Is Stella allowed a 'free' jello/eggwhite cookie? Good luck with kindergarten. It's a big step! My daughter hate the creams and it's almost an impossible task every meal to get it in her, so if I can find a way NOT to fight for the cream down her throat, I would be elated.
