Guest guest Posted September 16, 2004 Report Share Posted September 16, 2004 I do mashed turnip almost every day as it is a favourite of my daughter. I peel them and cube them and cook them in a small amount of water in the microwave. I find it best to 'mash' them with a hand held blender as it is better than a normal 'masher'. I add double cream (47 % fat) and oil. Sometimes we use meat with it or cooked white fish also mashed in. I then put them into individual containers and freeze. These are handy to take when eating out in restaurants as a family. We have, as a special treat, made chips (french fries) with turnip chopped into shape and partly cooked before being fried. However with this there is always too much oil and so I have to weigh what is left after cooking and weigh out an equal amount of fresh oil which has to be drunk as I have not found any other way to 'hide' it. Needless to say for that reason this is not a meal we do on a regular basis. I have to point out that we can use turnip as a 'free food', which some protocols don't allow. By trial and error we have worked out how much we can use without disturbing the maintenance of ketosis. I have been trying to find for some time a recipe for making turnip bread which I could adapt as bread is the one thing that my daughter would love to have and can't. Does anyone have any recipes for this? It was used during the war so maybe someone's grandparents may remember it?
