When we were at Hopkins they told us that turnips worked well for making

" mashed potatoes " . We bought some turnips today and I would like to know if

anyone has done this and how they did it? Do we boil them just like

potatoes?

Hi Mike

I use turnips alot and ph loves it the best! I boil it until

very soft ( calculate it as boiled turnips),then mash it.Then I add

beef(or chicken) and butter( I do not calculate cream in this meal,I

replace cream with butter as turnips " eats " alot of butter). Then I

add a bit apple sauce for desert to complete the meal.Very simple

and tastes good

I steamed them so they didn't absorb too much water, then weigh them. I add

butter and a little cream and herbs. My daughter doesn't get too many carbs

on her 4-1 ratio so it is a tiny meal, but with cheese and creme fraiche on

top it's yummy. We are vegetarians so I buy some vegi bacon and put 1 gram

of that on top too.

Good luck.
