I'd bake it in the oven just until the cheese was melty. Put some pepperoni and grated cheese on top and microwave until the cheese is meleted. The oil and cream can be whipped together for ice cream. Jess always liked some mayo put on the pita bread before the pepperoni and cheese. Or you can use a tomato slice as your base with pepperoni (or whatever) and cheese on top. For the duration our daughter was on 3:1, we made " eggplant pizza " using slices of eggplant, lightly sauteed, as the base, adding a natural low-carb pizza sauce, mozarella, pepperoni and jones sausage. It was fabulous, we even ate it with her! Then, when she went down to 2.5:1, we started using La Tortilla Factory low carb whole wheat tortillas (2 net carbs) and those came out like gourmet pizzas - we still all eat them even though she's been weaned off the diet! Guest guest Posted July 25, 2004 Report Share Posted July 25, 2004 My daughter loved all the pizza toppings--pepperoni-mozzarella cheese-black olives-mushrooms, etc... so we just mixed beaten egg and cream and butter into a scrambled egg--and poured it into an oiled pan the size for a mini pizza (otherwise the eggs runs)--and cooked one side-flipped it & cooked the other side--well done Then placed the egg on an oven proof pan & topped it with all the toppings and broiled until hot and bubbly Today, after 3 yrs on the strict keto diet, we use a low carb bread / roll toasted for the base-- I never used the pita bread because of the higher carbs--and I never checked it if there is added sugar Sandi Quote Link to comment Share on other sites More sharing options...

Guest guest Posted August 14, 2004 Report Share Posted August 14, 2004 A new health food store opened up in our town.... and I was delighted to discover some new products that are helping us a bit. Light Lavash bread has fewer carbs and proteins than many " atkins " products. A 28 gram serving has only 5 carbs and 4 protein.... A phone nmber to order is .
