I highly recommend the lo-carb noodles sold by Trader Joes.

they are in the refrigerated case where they sell other tofu foods.

They are a tofu and yam flour japanese noodle.

I make a chicken parm with the noodles on the bottom.

when you cover them with tomato sauce and cheese they are delish.

They are called Tofu Shirataki fettucine shape

here is the nutrition facts on the back:

Serv per pkg 2

Calories:20

Cholest:0

sodium:15mg

total carb.:3g

fiber:2g

sugar:0g

Protein:1g

My husband is not celiac but does watch his carbs and likes these noodles too.

Hi, I am waiting to talk to my son's dietician when she is in. But does anyone have a carb count for potato flour and white rice vermicelli? For the foods hubby is eating we don't have to worry a great deal about the carbs but for food that is made into a family meal I need to.There is a count to the vermicelli on the bag but the count has to be off. It says 44 grams per 1/4 cup. I used 55 grams as a guess to one cup which still seemed like a lot to me. We made a pot of chicken noodle soup two nights ago and used the noodles for all of us. My son has Type 1 diabetes and we carb count as he is on an insulin pump. He suffered low blood sugars for part of the night. Thank goodness I did not use the count off the bag........he would probably of ended up in the ER.Em

Welcome to the Yaks! While I am not certain of the carb counts, I have two ideas

for

you..... first of all try brown rice pasta. I know that brown rice is usually

better than

white for carbs. You could also try a pasta like Ancient Harvest Quinoa which is

a

corn/quinoa blend. I don't think quinoa is too high in carbs.

Next, if you haven't already, sign on to a ROCK (Raising Our Celiac Kids) group.

Type 1

diabetes has a definate link to celiac and if you are thinking there is a chance

your son

could be (ie that is why you are having him eat GF) this would be a good group

to

contact. You should be able to meet other parents with gluten free kids and

chances are

there will be at least one who is also working with diabetes. Before we moved

from FL to

MN, I was in a ROCK group who had 3 kids with diabetes (I think I am remembering

right).

They were wonderful. We are starting to look at my son for it also and they were

just so

full of support and information. Give it a try and let us know if you need help

finding a

group near you.

I have been using the Fit Day website at www.fitday.com for keep track of my

diet. It has a free account or you can purchase software that allows you to

input the foods you eat and it counts carbs, protein, fat etc. It does have

a database of the nutrition of many whole foods (like veggies/fruits) as

well as a selection of mainstream products. You can even input your special

foods into your account by typing in the nutritional content from the

product label. I put in things like my pasta and Applegate Farms deli meats

for example. It saves your information like a daily journal so you can track

your progress over time. Its really easy and I think I've been able to keep

my carb/protein ratio in order.

Anyway it lists the carb count of potato flour at 132.93 g per 1 cup with

9.44 g as dietary fiber and 11 g of protein. It doesn't list white rice

pasta in the database, you would have to judge from the bag. As I know from

Tinkyada brown rice pasta - rice pasta is extremely high in carbs and so is

white rice. For instance, 2 oz uncooked brown rice fettuccini is 43 g of

carb. So, your bag is probably accurate. I would suppose (and maybe someone

else has input on this point) that measuring cooked pasta would result in a

lower carb count because of the water weight. 2 oz dry would be pure pasta

but not 2 oz cooked. Just a thought.

Thank you Trudy, we live by the Calorie King book and occasionally their website. These stupid noodles have to be 44 grams uncooked. I can't find them anywhere. I talked to my son's dietician. We both came to the conclusion that if we use stuff with flaky carb counts that contain rice products that I will just treat it like rice and make sure I write it down and the reaction to my son's blood sugar. Should work for now as long as I log, log, log.Em
