Guest guest Posted July 27, 2004 Report Share Posted July 27, 2004 I make this cake based on 's recipe using s ratio and he loves it and it comes out really well. I also adjusted it for another little boy who is on the MCT version and it is a winner with him too. Highly recommend this one - I am making it for s birthday in September. If you don't want a chocolate cake, you could do a coconut and vanilla version - also a winner with my boy. Mind you he loves all the cakes - if you use liquigen in the cakes then you could use strawberry liquigen and make strawberry/vanilla flavour cake or strawberry/coconut flavour - whatever you like. Do you have a chocolate or white cake? Also...how about frosting? I'm sure it's just whipping cream like always. I'm a baker and I cannot seem to get these keto things down. I must be missing something. I'll try again, but if you have a white or chocolate (even cupcakes) that would be great. Guest guest Posted July 28, 2004 Report Share Posted July 28, 2004 Hi , The icing/frosting is just whipped cream with a little food colouring. There is a chocolate cake on matthewsfriends site as well as blueberry muffins (which look exceptionally good I have to say!) You can make keto-chocolate too - I have spent days fiddling around with quantities and an array of small bowls littering my kitchen, but I have mastered it and it doesn't taste bad either. It is: cocoa (small amount - about 1g) butter double cream (whipping cream I think it is in US) sweetner vanilla extract Nuts or coconut (for a bit of substance and to get carb/protein in) butter and cocoa powder in a small bowl - zap it in the microwave (just to get the bitterness out of the cocoa). Add the other ingredients in and then I put small 'blobs' of the mixture on greaseproof paper and flatten them out a little so they look like chocolate buttons and then put them in the fridge or freezer depending on how hard you want them. I use them as a snack occasionally for but usually have to give a small piece of cheese with them as well as the chocolate doesn't totally fulfill his snack script as far as protein goes.
