Guest guest Posted February 12, 2004 Report Share Posted February 12, 2004 Oh gosh, , you have GOOD ingredients on hand! A favorite of mine is chili-spaghetti (or any pasta) using the FF chili. Use as much as you have points for. Add fat-free sour cream if you have it and FF cheddar but be careful...that adds points quickly. Or stir fry. I love stir-fry veggies with 1/2 cup of cooked rice mixed in... With or without the boneless chicken sauteed in as well (again - it depends on your available points). You didn't mention eggs... if you have eggs on hand you can do a lowpoint omelet with one full egg and one or two egg whites and slice up that potato and saute it either IN with the egg or as a side dish. You can spice up the potato with cajun seasoning or chili powder if you like. You can even mix in some of those stir-fry veggies. I'm getting hungry even thinking about it. Hope this helps..... I thought the holidays were bad, but for me the Jan/Feb (or this year at least) seems worse, lol!! Two birthdays parties to plan, PTA stuff, regular school and activities for the kids and classes for me. AYYYY, dios mio.....I'm hanging in there, sort of maintaining and treading water right now.
