question about veggies & fruit in the winter

Jack loves the seasonal fruit we've been enjoying this summer and

even tried and liked green beans! What does everybody do to have

these available in the winter when they're out of season. Do you

can, or freeze them? What's worked best? Are frozen veggies from

the store OK? Also, just to make sure, green beans aren't included

in the group of beans that you shouldn't try until you're far into

Page 75 of BTVC (edition 10) lists frozen vegetables as legal. You can do your

own canning or freezing as well and we are approaching the time when a multitude

of legal produce becomes available for this.

Some people can or freeze them. If I get enough in my crop this year

I may try parboiling them and then freezing. But we'll probably just

eat them all fresh ;)

I buy frozen beans all the time. Plain cut green beans, french cut

green beans etc. They are okay as long as nothing is added.

Fresh or frozen green beans are not the same as dried beans or

lentils. They have to be prepared as per BTVC and shouldn't be

introduced until much further in the diet when there has been lots of

progress.

We buy the Kroger brand of frozen Italian green beans. We think they

they taste better than the usual frozen green beans.
