Guest guest Posted August 21, 2002 Report Share Posted August 21, 2002 There are lots of receipes pavlova Notes on making - when you seperate the egg whites and egg yolks, no egg yolk is to be in the egg white. If there is you have to start again as even the smallest streak of egg yolk, the egg whites will not beat up. Egg yolks can be used for other receipes. Eggs that are under 3 days old do not beat sucessfully. I put my pavlova on grease proof paper that I have previously wet under the tap and smoothed on the tray, I don't know why, I think it helps with the removal. When putting it on the tray, pile it in the middle and spead until it is larger than a bread and butter plate but slightly smaller than a large dinner plate. Notes on serving - remove the paper and place on the serving plate, a layer of whipped cream about 1/2 cm thick over the top and decorate with fruit, chocolaste curls or hail, hundreds and thousands (in New Zealand we decorate with green kiwifruit and red strwberrys). My daughter has a dairy intollerance so I serve the pavlova plain with fruit on top and a bowl of cream on the side. Here are just 2 Pavlova 3 egg white 3 tablespoons cold water 1 cup white sugar - preferably caster sugar (I use normal white sugar) 1 teaspoon Vinegar 1 teaspoon of Vanilla Essence 3 teaspoons Cornflour Beat eggs whites until stiff, add cold water and beat again. Add sugar very gradually while still beating. Slow beater and add vinegar, vanilla and cornflour. Place on greased tray and bake at 150 C(300 F) for 45 mins, then leave to cool in the oven. One called Never goes wrong pavlova Beat together 4 egg whites and a pinch of cream of tarter until stiff. Combine to beasat while slowly adding 4oz of sugar. When nice and fluffy mix by hand 4oz sugar, 1teaspoon vinegear, 1 tsp vanilla essence, 1 tablespoon cornflour. Cook at 275 F for 10 minutes, the an additional 1/2 hour at 250 F. Take out of the oven while still hot and place on the serving plate to cool I would suggest that 2 pavlovas would give everybody a taste especially as you will be serving other things. I wanna specify that corn flour is cornstarch (ive been looking at a lotta recipes) Also the superfine sugar works great for the castor sugar (icing sugar is powdered sugar:).
