I tinkered with an old recipe I had from the back of a Near East rice mix box and it came out really yummy; and I think that it would be Ok for the beginning stages of the diet too! Easy Sweet Glazed Chicken and Carrots 2 Tbls oil 1 pound boneless chicken (pork would be yummy too!) 1/2 large onion, sliced thin 3 large garlic cloves sliced thin 3 large carrots peeled, sliced on diagonal into " planks " pinch of salt and pepper Glaze 1/2 cup orange juice or pineapple juice if salicylat sensitive 1/4 cup wheat free Tamari (we use San J organic) 1/3 cup honey 1 tsp ground ginger a few drops of sesame oil Optional sprinkle of red pepper flakes Heat a large skillet to med/high heat and brown chicken on both sides; about 10 min. total. Remove chicken from pan. Turn heat down to medium Add onions, garlic and carrots. Sprinkle with salt and pepper. Saute, turning often until onions are soft and translucent. Add Glaze ingredients and bring to a boil. Add chicken back in, cover and simmer on med. until cooked through, about 25 minutes. Remove chicken from pan and reduce glaze until thick. We had mashed cauliflower and steamed broccoli. If you want an extra boost of sesame flavor, add a few more drops of sesame oil right at the end. If you need to leave out the tamari I think it would still be yummy. The carrot planks are big enough to pick them out for those who cannot tolerate the onions/garlic. Sam wouldn't eat the sauce anyhow, so I just cut up the chicken and gave him the glazed carrots on the side. ENJOY!!! This is what Elaine's site says about Tamari: " Fermented soy bean products such as 'miso' and 'tamari' that do not have wheat or other grains added, may be tried in small amounts after symptoms have subsided (about 3 months symptom-free) " Perhaps, people could use 1/4 cup of homemade beef broth.
