Kathy,

I use about 1 cup of nut butter, 1 tsp baking soda, 1/4 c. honey, 1 or 2 eggs

and 4 tablespoons of oil. If it's too thick you can thin it with water or

juice. I cook them very slowly on a greased skillet. I also make them smaller

than traditional pancakes. It takes forever so I cook the whole recipe up at one

time and then reheat them. Let me know if this helps. they come out pretty

close to what I think I remember pancakes taste like!:) HTH

Thanks ! I have been using the Midas Gold recipe but will reduce the

eggs and add oil and some juice. Sometimes I think it's my

pans............I have stainless steel and also caphalon, but am not too

happy with the latter.

If it's any concilation...I will not, ever, ever cook an SCD pancake

again! LOL Everytime I make up a batch, I'm at the stove for at least

an hour. The only way I can get them to come out, is to cook them

really really slow and I don't have a griddle so I have to do them one

at a time! LOL I've tried all the recipes and it's the same every time.

The PB/banana pancakes gave me the most success. You could sub cooked,

pureed mango for the banana. I use my waffle stix maker now. I got it

on clearance at Target for $9!!! No

If your mayo separates or seems thin, it probably " broke. " This

happened to me once. Thankfully, I had my Child/Jacques Pepin

book to help me out! This ususally happens if the oil is added too

fast. You CAN fix it though you'll have to beat the heck out of it by

hand.

To fix broken mayo

Add another egg yolk, some prepared legal mustard or a TBls of hot

water to an empty bowl. Add a few drops of the broken mayo and whip it

like crazy! keep add the mayo a little at a time to the new bowl and

whip thoroughly each time. Go really slow. Your arm will kill you, but

you won't have to throw a whole batch out. It worked excellently for me.

Good luck!!

> Help! You would think I could make a decent pancake by now but the

problem is I am using nutbutter instead of nutflour. They are so

thick can hardly pour them out to make a pancake. I am using 4 eggs,

what is going wrong?
