Guest guest Posted June 22, 2002 Report Share Posted June 22, 2002 Hi, I do make a lucious eggplant parm, but I usually only make it for holidays now - I served the frozen Celentano Eggplant Parm last night - It's the regular size entree (not family size) - On the back of the box, it says it contains 2 servings. I had 2 packs of it, but felt a bad cold coming on and wanted lots of veggies and only a little eggplant parm. Since there were still shrimp left from the grilled shrimp I had made a few days ago, I let DH and DS split them. Then, I divided 1 pack of the eggplant parm into 3 equal servings. Then, steamed spinach was appealing to me, so I added it to the menu Here is how I figure the Celentano's Eggplant: 1 serving (1/2 small package) = 7 points (430 mg sodium) 1/3 small package (1/3 of 2 servings) = 4.7 points (287 mg sodium) If you love eggplant parm, you probably will love Celentano I love their manicotti, too (2 pieces w/sauce included = 6.1 points (560 mg sodium) Celentano is the only commercially prepared eggplant parm I like, by the way.
