Unpasteurized milk

Hi everyone, My name is Tania (from New Zealand). I have just put my

10 month old son on the SCD. He has had problems since starting

solids at about 41/2 months. Bad eczema developed at his time and he

has been waking at night every 1-2 hours since 6 months. Reasons I

think he is gluten/starch intolerant are his bowel motions which

almost resemble exactly what has gone in. They are also enormous. His

eczema is clearing up since being on the diet. He has been gluten

free for a few weeks but this did not entirely solve the problem. He

also has really bad breath.

Anyway my question is do we use pasteurized or unpasteurized goat

milk for making yogurt??

Cheers

Tania

Thanks. The local goat farmer is a bit hesistant to give me unpasteurized

goats milk and feels that pastuerized is better to make into yogurt as your

'starting with a clean slate' and only growing the bacteria in your starter.

I'm also a bit hesistant but only because the yogurt would be for my 10

month old. Has anyone ever had any problems with bugs (or whatever it is) in

the unpasteurized yogurt??

I'm from Masteron, near Wellington. Luckily my son has never had any

vaccines. I was thinking about getting some enzymes. Thanks for the list.

Hi Tania,

When we heat the milk to make yogurt you are heating it higher than

normal pasteurization temperatures.

We don't recommend making unpasteurized yogurt, because you will get

competition with the bacteria in the milk.

So, if you buy unpasteurized you are heating it anyway as part of

the yogurt making process. Please see

http://www.pecanbread.com/goatyogurt.html#make for the full

methodology on making goat yogurt.

If you buy it pasteurized you will still have to reheat it (as per

the instructions above) to kill the bacteria in the milk, then cool

to the appropriate temperature and add the yogurt starter cultures.
