Although I have read (I think) every internet tip - I'm still not having an easy time cracking them. Also, it only seems to stay fresh a day, maybe two. Any successful coconut milkers? You can buy unsweetened, dried, shredded coconut and make your own coconut milk with that. The recipe is on www.pecanbread.com , I think....... it's very easy. You just pour hot water over the dried coconut, let it set for a bit and then whir in the blender and strain. Sweeten with honey, if desired. Coconut Milk Preheat oven to 400F. Place whole coconut on cookie sheet. Bake 15 min. (Shell will crack). Remove from oven. Hit with a hammer where crack appears. A tip from personal experience; hammer into smaller pieces and cut out coconut with a large chopping knife by cutting in then pressing the knife side to side to loosen the meat. Remove coconut meat from shell. Cut in chunks and chop in blender or food processor until very fine. To make milk, add 3 cups hot water to chopped coconut. Let stand 15- 20 min. Strain through cheese cloth. This milk can be frozen. Another tip from personal experience is to put the water in with the coconut before you turn on the blender.
