Guest guest Posted November 7, 2004 Report Share Posted November 7, 2004 The Meyenberg milk has an especially " goaty " smell and taste, in my opinion. You might look for a different brand. I know Summerhill Farms, at Trader Joe's is better. One thing you can do to make it taste less bitter is to drip it...... line a colander with a clean tea towell and set it over a larger bowl...... in the fridge (at least that's how I do it), for about six hours. The bitter taste is more in the liquid that drains off. I need to flavor it b/c it's very bitter. Anyone have a good combination for flavoring it? I am thinking it is still going to be pretty bitter and stinky. Do you know if Mayenburg has Nubian goats? I thought that was supposed to be the best tasting. (nubian milk) I am thinking they probably are not nubian b/c it is real bitter. I like Caprine Estates, but our HFS doesn't have it now. I am hoping that this is just temporary. Wild Oats in Indy had Caprine Estates. Maybe other Wild Oats stores carry it too. Just boil the strawberries down until they're really thick, the consistency of jam. Sometimes I'll add a bit of honey if needed. We also do cherries (the favorite, but a bit more expensive around here). We get both in frozen pkgs from HFS when we can, but from Safeway works well too. We've also done peaches when they were in season, and I canned some of them that we occasionally break out for special occasions. For some reason we didn't have good results with raspberries or blueberries, but you might be able to try those as well. My 10yo ds today created " banana pudding " - squished a couple of very soft bananas then mixed it with his yogurt. I think it was probably as much bananas as it was yogurt, but he was pretty excited about it. It took a while to acquire the taste for the goat yogurt, but if you hang in there, they'll eventually get it. Guest guest Posted November 8, 2004 Report Share Posted November 8, 2004 Our fave ways of flavoring yogurt are..... vanilla & honey.... mashed banana & honey..... or peanut butter and honey. A friend of mine (who owns goats) told me that Meyenberg blends the milk of all kinds of different breeds of goats.... so you don't know what you're getting. Yes, Nubians give great tasting milk..... when I was growing up, we kept several Nubians... so that's what I was raised on and it is really superior, in my opinion.
