It seems that the temps used in the pasteurization process for commercial milk production is lower (something like 165 degrees F, I think?) than what we use for yogurt making....... and they only hold the milk at that temp for 30 seconds. From what we read at that time, I think we concluded that our temp and holding time would be more than adequate to prevent the MAP bacteria's survival..... though I'll admit I don't have time at the moment to go back and re-read it. There was also some question as to whether MAP was present in goat milk at all...... I don't think it is..... does anyone else know?
