I've noticed that my skin looks better overall when I stick with rice, corn and buckwheat. I wonder if we have a variation of celiac sprue? They list all non-gluten foods and great ideas for gluten substitutes. If you just type in celiac you will find loads of ideas. Definately let me know if you improve or not. Try not to eat any new strange things for the first 3 days - like those non-gluten breads and cookies. You may react to them since they have unusual ingredients. Just cut out the wheat rye oats and barley if you can. Then later you could experiment with gluten free packaged products. Healthfood stores have tons of gluten free products from bread to cookies. pastas, and crackers. I tend to not even eat those since I avoid packaged foods. Actually, I follow a very simple whole foods diet. Very minimal packaged foods and only fast food once in a blue moon, and dairy is very minimal, too. A great wheat substitute is to simply have some rice instead. I love rice with olive oil and salt on it. White rice, basmati, wild rice. There are non-gluten breads in stores, but they all have strange leavening ingredients that make me flare. There are rice noodles you can buy at healthfood stores. Dont overcook them or they get mushy. There is something called Polenta. Its a corn product that you cut kind of like those cookies in the refrigerator section and fry (they are not sweet, though). You can also get millet and cook it like rice. It reminds me of cous cous. For me the rice, corn, and millet are enough because I also eat lots of veggies, meats, eggs, oils, seeds, and certain kinds of fruits. Getting the bread out allowed room for the stuff that is actually good for me:) Here is a good story to remember when avoiding foods bad for you: My husband wanted taco bell for dinner tonight, so on the way home I stopped at the taco bell and got him his burritos. I then stopped at the grocery store at the corner and got myself a bag of grapes, an expensive steak, and some red bell peppers to toss on the grill with my yummy steak. This is always just a feeling I have had about carbo's. However I have never delibrately gone off wheat, rye, oats, barley to see what the effect is. However, after reading these posts I am going to do it. I will give it a go and focus on raw foods, rice, corn etc and see what happens. I will report back to the group in 7 days. The diet/gluten free angle doesnt always work and can be hell to follow. I feel we all reach a point where we know what to stay away from without living in fear that we will react to a certain food.
