The bacterial culture will prevent it from " spoiling " as the yogurt fairies perform their magic! When it's finished, you'll be able to tell by fermented " yogurty " smell. Chill it for six hours or so before stirring..... and then take a teensy bite (or maybe ask your hubby to be the guinea pig). It should taste slightly tart.... and will have a nice smooth texture. I just started the SCD for my four year ols son and myself (I have ulcerative colitis and he is booked for assessments next month because his behavior is making me think he may be high functoning autistic like his Dad and he is always sick!) Anyway, I have a yogurt question to ask from my arsenal of pretty dumb questions. Can I do it wrong enough to food poison my entire family? I made sure all of the bowls etc that I used were very clean (practically sterilised!) and I've kept everything at the right approximate temperature. I'm sort of paranoid because I have a very sensitive gut (as does the boy) and I am pregnant as well so susceptible to the whole " food borne illness " thing. " , What brand of yogurt did you use for a starter and what are the ingredients listed on the yogurt container? " The question is whether it has bifidus in it. The label doesn't say. So you would need to call and find out. SCD homemade yogurt is made without bifidus. Many of the commercial yogurt contain bifidus. That's why the list of acceptable commercial yogurts to use as starters is so small (it's on Elaine's website). Please do call the company and find out and let us know too. Maybe this yogurt would be an option for others to use as well.
