I would definitely try to get a fridge to store leftovers that you can heat up later. I'd also see what restaurants are around & then search the internet or call them for GF info, just in case you & some friends leave campus to eat. As far as snacks, I think that Schar crackers, that are described as being like saltines, are the best. Those with peanut butter would be a good snack or lunch. Cereal, chips, yogurt, fruit, frozen taquitos, & dips for chips. Amy's makes a very good rice crust pizza, if you have a little freezer in your fridge - we usually had cheese & pepperoni to it. Amy's also has good frozen gf enchiladas. Even if you don't have a freezer, I bet the kitchen would let you keep it in their freezer. And if they say they'll work with you, that's great. Let them do the work so that you can focus on having a good time!!! I'd provide a lot of info on the gf diet now, especially to the first school, so that they will have the knowledge to prepare at least something that is gf for each meal (that isn't that hard for them to do & it isn't that much to ask) - but still check on them b/c you don't want to get sick at camp.
