Peel and cut squash into even strips. Soak squash in cold water for 1 hour. Fry in deep fat at 325° for 5 minutes. Drain. Increase heat to 375° and fry until fries are tender and nicely browned. Drain on paper towel. Salt lightly if desired. Although deep fried are legal many prefer to bake them. Here is how we bake squash fries from the Pecanbread recipe link: SQUASH FRENCH FRIES by Sheila Butternut squash olive oil Preheat oven to 425F. Cut butternut squash in thin slices by hand or with a slicer. Toss them in olive oil, and place slices on a *baking stone. Bake until crisp.
