I spoke w/Elaine G. directly about this issue at the DAN conf. in LA and she told me (once I gave her the particulars about my daughter) that once my daughter was on the diet successfully for several months that I could start introducing it conservatively and see what happens. I don't want to put words in her mouth though for your particular situation. I started my daughter on the diet in Oct. and just now started making flax seeds crackers. My daughter loves them and I've noted no adverse reactions.I have the flexibility of making them sweetish (w/raisins, apples etc) or salty and spiced w/onion and garlic. Re: dehydrator usefullness, It's been great for me and I was very hesitant to go there. I bought the 5 tray excalibur and that's just big enough to be able to stand up mason jars in it to make yoghurt. I also make the above mentioned crackers with it as well as fruit leather, beef jerky, almond crackers (baked first then dehydrated to make them crispy)... I'm very happy w/ this purchase. People on this site were very helpful in giving me ideas to get started and I am so thankful to them.
