Hi Rhonda,

Wild feremntation is allowing whatever microflora that is naturally

present in foods to ferment it.

For example if we used raw milk to make yogurt without sterilizing

it the bacteria etc. naturally present in the milk would likely be

present after the incubation period. This leaves open to many

potentially harmful microflora etc. so, we heat up thw milk and

pasteurize it and add (inoculate) it with the recommeded yogurt

starters (bacterial cultures).

So when fermenting foods use the appropriate bacterial cultures to

ensure that helpful bacteria will be in the end product.
