This is a stuffing recipe for a single Cornish hen. Just increase it to the

number of servings you will need for a large chicken or a roast turkey.

butter

nut pieces (walnuts, almonds or pecans)

1 clove garlic

salt and pepper

fresh herbs scissored (sage, thyme, Rosemary Oregano Basil combination or

whatever is on hand)

1/4-1.2 finely minced onion

raisins or other dried fruit cut into pieces.

a little wine or grape juice

1 rib minced celery

salt and pepper to taste

In a skillet, saute onions, celery and garlic in butter add nuts raisins or

dried fruit. Add almond flour and cook, stirring until golden brown. Add a

little wine or juice and cook a little longer. Stuff and truss poultry and

roast

Tip: add orange juice or wine to roast poultry drippings for rich tasting

gravy

..

Green bean casserole.

Add the following to cooked french style green beans:

slivered almonds, cooked sliced fresh mushrooms, pieces of cooked bacon, cheese
