Thanks Jody,

I missed that. I make my own almond butter with blanched nuts because I am

cheap and don't like to dish out extra money when I can save a few pennies.

;)

Carol's suggestions are great, I especially like the beet juice

idea. Also, Elaine has said that a couple of drops of food coloring

would be okay to use. Of course it'll depend on if your child

tolerates them okay.

There is a frosting recipe with the peanut butter cake recipe at

http://pecanbread.com/recipes.html If you use almond butter in the

frosting it comes out very light and can be tinted to almost any

colour. Also Elaine's Honey Frosting in BTVC comes out very white.

Just a note, you'll have to use blanched almond butter for it to

come out light colored.

If you use the almond butter that was ground with the skins on it

will still come out brown like peanut butter frosting.
