Guest guest Posted March 31, 2006 Report Posted March 31, 2006 Hi, I make a "quick" macaroni and cheese for my grandchildren. Cook macaroni and leave a small amount of water in it. Add S & P, butter, can milk and cheese and mix well. My grandchildren really like this and it's quick, easy and inexpensive. My granddaughter went home and told her mother that she wanted her to make macaroni and cheese like I do. My daughter-in-law had to ask me what she was talking about because Peyton wouldn't eat hers. My mother always used to cook macaroni this way without the cheese, just left small amount of water, added can milk, butter, salt & pepper. Donna S. Quote

My daughter-in-law had to ask me what she > was talking about because Peyton wouldn't eat hers. My grandma made it the same way. My mother makes it in the oven (butter, milk, cheese, cooked pasta). I make it with a cheese sauce (cornstarch, pepper, mustard powder, milk, shredded cheese, butter) and cooked macaroni, in the oven. For those wanting a simple cheese sauce recipe, Mueller's Pasta (which we can't eat) had a very simple cornstarch based mac & cheese recipes on their macaroni box for years. It might be on their website. *checks quickly* Yep. It's the Baked Macaroni and cheese Recipe at http://www.makesameal.com/ I've been making it for so long that I just eyeball the ingredients. And I sometimes sub in mochiko or tapioca starch if I'm out of cornstarch. I've made it with Tinkyada noodles of all sorts, some really expensive imported pasta (orgran, maybe?), and Trader Joe's brown rice penne. It's always good. I usually add in peas for extra protein. I tweak the recipe a little (add mushrooms and stuff) and use it for potatoes au gratin. If you eat ham, you can add cubed ham to the casserole. ygg Quote
