They have nothing in common with our sweet American breakfast pancakes, except that they are fried cycles of batter. The basic recipe is chickpea flour, a pinch of salt, and water to form a batter. Then various recipes add spices, onions, green chilies, and/or cilantro to give different flavors.. I looked in my files, and I don't have any recipes on my computer. Because chickpea pancakes are staples in Greek, Indian, and Middle Eastern cuisines, you can easily find hundreds of recipes on-line. Apparently, they are sold as snack food by street venders in Greece. best wishes in Oregon Re: Pita recipe Chickpea pancakes would be excellent with hummus or eggplant.
