yummy recipe and some converts

first, it looks like I've managed to convert some people to the

Atkins WOE....my parents are both doing a modified version of the

diet - my mom talked to her oncologist and together they worked out a

modified version of it so that she won't lose too fast...she's just

come off chemo and the cancer isn't completely gone, and losing to

fast could cause a resurgence...so far, in 2 weeks, she's lost 2

pounds - dr said not to lose more than a pound a week...but she says

she feels better eating this way already....and dad has lost about 5

pounds too!!!! I am sooooo happy for them....

and my SIL was diagnosed with severe sleep apnea last week and they

told her she has to loose weight and quickly! She saw what success I

was having so she went out and bought the book and today she started

induction...and the best part is, she is dragging my very overweight

brother on this diet with her. And even her 7 yr old son wants to do

a modified version of this diet - he is slightly overweight, always

has been since all he wants to eat is pasta and more pasta...he says

that he looks in the mirror and doesn't like what he sees...he wants

to eat better so he can feel better and have more energy and feel

better about himself...plus, getting him off that pasta will be good

for him since he was diagnosed with a wheat intolerance a couple of

years ago but still ate it anyway....if nothing else, it should help

calm him down and stop the outburts...

now, for the yummy recipe...on the weekend, I made that cake roll

recipe that Sue H gave us - it is wonderful!!! everyone loved it and

couldn't believe it was low carb...since too many of us in the family

have a lactose allergy or intolerence, I modified the recipe (using

soy cream cheese and soy sour cream instead of the real thing). For

the filling, I made a chocolate ganache....yummy...

for those who don't know what a ganache is, heat up some heavy cream

(or nutriwhip) and add some chopped up bittersweet chocolate and stir

until chocolate is melted...add a bit of Splenda to taste....I also

added a bit of decaf coffee to make it mocha flavour...then, chill

until a spreadable consistency...great as a filling for sandwhich

cookies...not sure on the carb count, but it sure was yummy...I'm

thinking of making some more with the nutriwhip and freezing it like

ice cream....since Nutriwhip is an " edible oil product " , it freezes

fine once it has been whipped or otherwise " processed "

and best of all, with 2 birthday celebrations this weekend (both on

Sunday - I made two different cake rolls), I didn't gain any

weight...didn't lose any either, but that's better than gaining..

well, I've babbled on long enough...oh, my mom says the 20 pounds

I've lost so far is very noticable...
