Guest guest Posted March 4, 2006 Report Share Posted March 4, 2006 Hi Kristi, I've had great luck making GF meatballs for spaghetti. I don't measure, but I think it would be hard to mess up. Here's what I use: Put a couple of hand fulls of GF crispie rice cereal in a ziploc freezer bag and crush it with your hands until it is like bread crumbs. Mix what seems to be the " right amount " into the ground beef. Add a raw egg. Add GF tomato sauce or ketchup. Add whatever seasoning you like. I always add garlic powder. Make 1-inch balls and place in a baking pan. Bake at 350-degrees for about 20 minutes. Even my non-GF family has really liked them. Hope this helps. I don't know that I have a " recipe " , per se, but this is how I make them: I combine ground beef, onion flakes, seasoning salt, pepper, a couple of eggs, some quinoa flakes, a little bit of milk, and GF breadcrumbs. It's hard to give definite amounts, but I do make sure to have them somewhat moist, but not so moist that they fall apart when you try to form them. I bake them at 350F just until done. The ones I've made I've used in spaghetti sauce, used in the slow cooker in a type of sweet 'n sour sauce, used with other pasta, etc. They have a nice texture when they have both the quinoa flakes and breadcrumbs. Guest guest Posted March 5, 2006 Report Share Posted March 5, 2006 When I was just a kid (which was a long time ago), all my classmates would be excited the day that they knew they were going to go home and have "porcupine balls" for dinner. I always felt left out because my mother didn't make them, and it seemed like everyone else in the world did. I have no idea if people still make porcupine balls, or if it was a regional dish, or what. I never heard of them outside of the setting. Basically, it is just a regular meatball made with rice instead of other fillers. As the balls cook in the tomato sauce, the ends of the rice stick out like quills. I can guarantee you, kids are absolutely crazy about them. My mother always used corn flakes instead of bread crumbs to make meat loaf. I don't remember her crushing the corn flakes. I think she put them in whole. Her meat loaf was the best (but she also put in a bit of ground sausage, which had something to do with it). I use one egg per pound of hamburger, add salt and pepper and whatever other spices you want, onion and a little bit of Worchestershire sauce. Then crush whatever cereal or something of the like to make it stick together. Sometimes I use Potato Buds otherwise you can use GF corn flakes or GF bread crumbs or something. All crushed up of course. Here is the recipe we use: 1 lb. ground beef 1 tsp. salt 1/4 tsp. pepper 1/4 cup milk 1/4 cup uncooked rice ( I use Kraft minute rice) Mix and shape. Brown in skillet & drain grease. Sauce: 2 cups tomato sauce (I use Hunts) 1 tbsp. worcestershire sauce (I use Lea & Perrins) Pour sauce over meatballs and simmer, covered 45 minutes. Here is another recipe for "italian meatballs". They go good with spaghetti. 1 lb. ground beef 1 cup dried breadcrumbs 1 egg 2 tbsp. parsley 1/2 cup parmasean cheese 1 tsp. salt pinch of pepper 2 tbsp. cold water Fry in 3 tbsp. olive oil on medium heat until brown, 10 -15 minutes.
