Guest guest Posted March 3, 2004 Report Share Posted March 3, 2004 According to the FDA nutrient database, couscous has a total of 134 g carbs per cup, including about 9 g. fiber, for a net carb count of 125 g. The total net carbs for 2 cups would be 250 g. Divided by 6, this would be about 42 g. per serving, so this is a relatively high carb food. Those of us who control our blood sugars (and cholesterol) by controlling our carb intake would generally avoid items with this many grams of carbs per serving. (For me, one serving has more carbs than I eat in a normal day.) I would not recommend it for diabetics. At the very least, I would strongly suggest testing one's blood sugar levels at, say, 1/2 hour intervals for two or three hours for several times after eating it (since a single test rarely gives us reliable information). (65) so it's going to convert to glucose fairly quickly and give you high BGs. Last year I complained to the relevant authority that a manufacturer here in Australia had labeled their couscous " Low GI. " To be classed as low it has to be below 55!. Of course you can reduce the Glycemic Load by having a smaller portion. I 'spose I could have a serving and take 4 units of insulin to cover it...but I'd really rather not. And for those trying to control with diet and exercise only, it's sure to raise BGs. If you doubt this, check your BG before eating a portion... then check 1 and 2 hours later. Did anyone say this was a diabetic friendly recipe? This list doesn't do much of that, but one you might find interesting is QFGH . This list is Quilters For Good Health, and you don't have to be a quilter to join.
