I've never been a junk food eater, and we didn't do it when I was a kid - never had the money for it. I'm also a cook, and use fresh everything 90% of the time. Fast food was never more than a very rare thing - mostly when travelling. When I was a kid, my father wouldn't let white bread into the house. We at pumpernickel and rye back then. Ice cream was allowed, however, <grin>. I still got fat and still got diabetes. And there are millions and millions of people who eat processed crap all the time and aren't fat and don't get diabetes. Eating well is good for one's health, overall, is a good idea, but no guarantee of anything. And yes, maybe Americans eat a lot of processed foods, but I look at the typical American family with both parents working 50-60 hours a week, trying to raise kids, take care of a home, and I understand why the easier stuff goes onto the table. Despite so many studies showing better control with lower carb, they still insist we shd eat high carb but use more meds to cover them.
