Most felt it was more of a dessert tho rather than a veggie & actually I did too & intended it as a replacement for sweetpotato pie for me! If I make it again I will use only splenda & cut the amount used in half even tho I did not find it a very sweet dish at all. After all, I come from a culture where 'sweet potato' is normally synonymous with holidays, brown sugar & butter, and marshmellows.
