I wouldn't say I'm a spinach " lover " but it does have the

advantage of being one of the few veggies I like that is also

low-carb and relatively cheap. I REALLY like tomatoes (which are

a fruit, I know!), potatoes (high carb), asparagus (too darned

expensive!) , mushrooms (not exactly nutrient packed, for the

most part, and portabellas are expensive!)

Spinach is also extremely versatile, and international! There's

Greek spanikopita (spinach, feta cheese, seasonings and phyllo

dough), Indian saag paneer, good old raw spinach in a salad,

the list goes on!

RE: Too Much of a Good Thing?

Calcium also interferes with some meds.... I got a note from

my pharmacy not to take one of my meds with calcium, so I

called, and he said just wait an hour before you take any

other meds, after taking Calcium. Maybe pills should not be

taken at the same time as eating spinach either because of

absorption problems? On that same note, Vitamin C helps with

absorption of Iron.

Most women past menopause should not be taking extra iron & should make

sure that their daily vitamin does not contain it either. It is

dangerous unless you have a special medical condition needing it.

Rita,

You're very welcome :-) I used to take iron regularly, but

now at my age, I look for vitamins without it.
