What about stuffed baby 'bella mushrooms?

If it's a pot-luck, you only need 2-3 per person, as they'll be sampling so many

other

things. :)

Take some baby portabella mushrooms and 'scoop' them out with a spoon after

cleaning.

Mince up the stems and saute' in olive oil with the spices of your choice (I

like lots and lots

of garlic, some basil and/or italian seasoning, and just a dash of salt and

pepper). Spoon

the mix back into the caps and sprinkle with shredded low-fat cheese

(mozzerella, Swiss,

or parmesan, maybe even blue cheese or feta!)

Bake in the oven just until the cheese melts. Voila!

I'll check specific ingredients when I get home. It's spinach based, and the

box claims 3 servings to the box, I guess as a side dish. I use it as the

base for a meal so it serves just me.

It's a curry style dish with a green vegetable in spices and sauce with some

indian cheese. I don't know the exact intepretation, but I do know it's

tasty. I usually add some meat to the reheated stuff and make a meal of it.

heat, but not burning hot/spicy.

belong to a recipe sharing group and one person shared a similar recipe the my

kids

actually liked... Do you guys share recipes around here? if so, I will pass it

on...
