If it's a pot-luck, you only need 2-3 per person, as they'll be sampling so many other things. Take some baby portabella mushrooms and 'scoop' them out with a spoon after cleaning. Mince up the stems and saute' in olive oil with the spices of your choice (I like lots and lots of garlic, some basil and/or italian seasoning, and just a dash of salt and pepper). Spoon the mix back into the caps and sprinkle with shredded low-fat cheese (mozzerella, Swiss, or parmesan, maybe even blue cheese or feta!) Bake in the oven just until the cheese melts. Voila! LOL It does look like a pretty easy meal to make. I belong to a recipe sharing group and one person shared a similar recipe the my kids actually liked...
