Guest guest
How about instead of syrup, blending up some fresh blueberries (low glycemic and high in anti-oxidants) with a touch of Splenda and cinnamon? Guest guest
How about making buckwheat crepes instead of pancakes and folding them around savory fillings, such as sauteed tomatoes, peppers, onions, etc.? Here are some recipes on www.epicurious.com using eggs, spinach, bacon, etc. The buckwheat crepes use less flower than pancakes too, if I'm not mistaken. If the link doesn't work, you can do a search on epicurious: http://tinyurl.com/4qaft Sandy I can't eat much in the way of grains because they spike me, but I did well with buckwheat pancakes, although I don't eat them very often. (I kept wanting to put syrup on them and THAT spikes me very badly!)
Guest guest
Barley is also a good replacement for rice as a side dish... I saute mushrooms and onions, and add barley, cooking according to package directions. Makes a delicious side dish. Sandy ----------------------------------------------------------- If you like barley, you might give that a try as well. I found that it didn't raise my bgs either. I made a nice soup, with a lot of meat and mushrooms in it, and it was delicious!
Guest guest
I like Maple Grove Farms Cosy Cottage brand, made with Splenda: http://www.maplegrove.com/sugar_free.html Sandy Diane, I have trouble with grains too. But I am going to try buckwheat pancakes when I get a chance. And Smucker's SugarFree Breakfast Syrup with NutraSweet is quite good.
